Ingredients

FOR THE TACO SALAD:

•  two fajita-size flour tortillas — swap corn tortillas to prepare gluten free

•  two tsps extra-virgin olive oil — divided

•  three-quarters tsp kosher salt — divided

•   half tsp black pepper — divided

• one pound 93% lean ground turkey

•   one tbsp chili powder

•   one tsp ground cumin

•   half tsp garlic powder

•   one head romaine lettuce — roughly sliced

•  one can reduced-sodium black beans, rinsed and drained — (15 ounces)

•  one can Mexican-style corn, drained — (11 ounces)

•  two cups cherry tomatoes — halved

•  one average ripe avocado — peeled, pitted, and diced

•   one cup loosely packed cilantro leaves

•  half  cup reduced fat shredded sharp cheddar cheese

•  One-quarter cup thinly sliced green onions

FOR THE SALSA YOGURT DRESSING:

•  One-quarter cup prepared salsa

•  One-quarter cup nonfat plain Greek yogurt

Instructions

1. Place a rack within the middle of your oven, and prewarmth the oven to 425 degrees F. Coat a big rimmed baking sheet with nonstick spray.
